My Heart and Soul

It is almost three years since the loss of my husband.  If I had one wish, it would be to have my him back by my side.  Life has been difficult without him.  Have been in therapy all this time.

They say in the beginning it is raw pain and eventually eases as time goes by.  When Frank passed away, half of me passed away.  We were each others soulmate.  We were more than husband and wife, a couple, or partners.  We had become one unit.

:) I love smiley face. Hardly believe it has been almost a year since I posted. Too much going on I guess. If you really look at it this is actually a diary.
WOW...I haven't posted for a year. Well, not on here, more in my mind. What to do, what to say, oh my, my, my!

I love mornings sitting on the patio drinking my coffee. There are parrots flying over head and making lots of noise. Ain't life sweet. :). I am probably the worst Gardner in history.

Crisp Autumn Morning

I love mornings that are cool, wind blowing gently, and just listening to the tree branches giving in to the breeze. It has been one trying year. My hubby went into hospital 30 December 2013 and came out in May 2014. Did not know whether he would make it or not. Spent a lot time at work and hospital. He is home now and still ornery :).

We have wild parrots flying around here. Awesome to just watch them, however they can be a bit noisy. Still waiting for the Cardinals and Blue Jays to come back...since Katrina they haven't been around. My garden this year went wild...WITH WEEDS :). there is so much to do and little time to do it.

So, going to post a recipe.....there are no exact measurements for this as it all depends on individual taste.

Chicken Salad

1 large can of Swanson's canned chicken (or whatever brand you prefer)
Peppercini peppers, I use about 5 large ones...just depends on your taste, sliced
Mayo about 1/4 cup and again depends on your taste
Walnuts or pecans about a handful
Cranberries - half a handful

Drain the liquid from the chicken and put in a medium size bowl. Break up the chicken until it looks shredded. Add all other ingredients and blend together.

I like this on croissant rolls. You can use any kind of bread that you choose, however regular sliced bread isn't my thing.

You can also take lettuce and shred it then place an ice cream scoop size on top of it...makes a great salad or side dish.

Hope you try this and have an awesome day.

A new day and I thank the Lord for allowing me to have it.  I just got an iPad and have been playing with it all day.  New found wonder for me :)...brand new toy...something else to play games on...and there is more, but can't think of them right now.

Here is an easy recipe and I plan on putting in a picture at some point.  I am really slow on that because I have brain farts all the time and just can't remember how to do things.

My version of guacamole.

     2 medium size avocado's
1 half to 3/4 quarter of a yellow onion, diced
1 or 2 plum tomatoes, if they are small and 1 if they are large, diced
     Garlic powder about 1/2 tsp
     Red pepper flakes to taste

Mash the avocados - leave some chunks. Add the onions and tomatoes, red pepper flakes, and  garlic powder and blend. Put in fridge for about an hour for favors to meld together.

Ok, that is what I am making for dinner.  I am unconvential when it comes to meals. I know they should be balanced and I think about it for a minute or two and say nah this good!

I am learning this blogger biz :).  It's always funny how I seem to get "rid" of the things I shouldn't.  I had 2 posts and one had an original recipe by me, yay :),  Not anymore.  I can always repost later.  My post was made back in September of 2012.  Wow, where does all the time go???

I am still not sure of what I expect from this blog, but it does say to tell about your life.  So, here is short story....that is what I call them.

My bro's birthday is this weekend, Memorial Day, and to make it special I am meeting his second daughter for the second first time.  Confusing huh???  Last time I saw her, she was still in diapers and just learned to walk.  She grew up to be a beautiful 18 year old.

We are having a BBQ not only to celebrate the weekend, but my bro's BDay and the meeting of the niece.  We text a lot and finally I can FaceTime her.  Her older sister lives about 5 minutes from me...we see each other maybe once a year.  This is the year to get to know everyone again.  I love my family!!!

On with the menu - typical one, hamburgers, hot dogs, potato salad, baked beans, spinach dip, baked mac & cheese - niece makes this - and the usual condiments.  So, what is so special about this since it could be an everyday menu.  Love of family and getting together is what makes its special.
